4-Ingredient Sheet Pan Chicken Sausage & Sweet Potatoes
This easy & cheap 4-ingredient sheet pan dinner is high in protein, packed with veggies, and bursting with fall flavor!

- 12 oz precooked chicken sausage (sliced into rounds)
- 1 medium sweet potato (cut into ½ inch cubes)
- 1 bell pepper (chopped into strips)
- 3 garlic cloves (minced)
- salt & pepper
- 1 tbsp olive oil
Preheat the oven: Preheat the oven to 400°F. Line a large sheet pan with parchment paper or aluminum foil (if desired) and lightly spray with olive oil.
Prep the sheet pan: Add the sliced chicken sausage to one half of the sheet pan. Add the cubed sweet potato, bell pepper strips, and minced garlic to the other half.
Season: Drizzle 1 tablespoon of olive oil over the sausage and vegetables. Season the vegetables with salt and pepper, then toss everything until evenly coated. Spread into a single layer.
Bake for 20 minutes, or until the sweet potatoes are tender and the chicken sausage is lightly browned.

- Use pre-cooked sausage: Make sure to use pre-cooked sausage, not raw sausage, for this recipe.
- Cut the sweet potatoes into 1/2 inch cubes so it cooks evenly along with the bell peppers and chicken sausage.
- I recommend using fresh vegetables; you could use frozen, but they release more water so it may get a bit soggy while baking.
