Peach Cottage Cheese Toast with Honey

A quick, easy, protein-packed breakfast or snack that's ready in less than 10 minutes! It’s a delicious and healthy recipe that can be made with just 4 simple ingredients.

Ingredients
  

  • 1 slice bread
  • 1/3 cup cottage cheese low-fat or full-fat
  • 1 medium ripe peach cut into slices/wedges
  • 1-2 teaspoons honey

Optional toppings

  • chopped nuts, balsamic glaze, or fresh basil

Instructions
 

  • Toast the bread (optional). If you like your toast a little crispy, toast your slice of bread lightly on the skillet with a drizzle of olive oil or in the toaster on low setting until it becomes light golden on top.
  • Add cottage cheese on top of the bread. Spread evenly across the bread using a knife. I used ⅓ cup of cottage cheese, but you can use more or less depending on your preference.
  • Top with sliced peach wedges. Arrange them in an even layer on top of the cottage cheese spread.
  • Drizzle honey on top of the peach slices. You can skip this step if you want, or if you are making this toast for young kids.
  • Serve and enjoy! You can top with fresh basil, chopped nuts, chia seeds, or a drizzle of balsamic glaze if desired!
