I feel like cottage cheese is having a moment this year. Like how sourdough recipes went viral in 2020 (remember that?!). And for good reason – cottage cheese is packed with protein, calcium, and it’s a pretty versatile ingredient.

In today’s post, I’m going to be sharing my new breakfast obsession this summer – peach cottage cheese toast with honey!

Cottage cheese can have a little bit of tangy taste to it, which makes it perfect for pairing with ripe peaches. I think even blueberries or strawberries would make amazing cottage cheese toasts!

If you’re constantly rushing out the door in the morning, this recipe is for you! It’s a quick, easy, and healthy breakfast that takes less than 10 minutes to make. Perfect for feeding kids before school or when you’re running late to work.

Plus, this is a delicious summer breakfast recipe for when peaches are in season! But don’t worry, you can use frozen peach slices or other seasonal fruits if you’re making it during other seasons.

The best part is that it’s high protein and made with fresh ingredients! I added honey to elevate the taste a bit, but you can use a whole variety of other toppings depending on your preference.

This recipe checks all the boxes: high in protein, naturally sweetened, and packed with nutrients from both dairy and fruit.

I love this recipe for breakfast or as a quick snack because it keeps me full for hours and it’s a well-balanced meal composed of carbs, fats, and proteins.

Here are some of the good stuff you’ll find in this recipe:

  • High protein – cottage cheese is loaded with casein protein, which digests slowly and keeps you full longer. You can also make this toast on whole wheat, sprouted grain, or Ezekiel bread which contains more protein than white bread

  • Naturally sweetened – use ripe peaches to make your toast sweet! I added a drizzle of honey to give it an extra sweetness and enhance the taste a bit, but you can definitely skip the honey or use other toppings

  • Nutrients – peaches are a great source of vitamin A, vitamin C, antioxidants, and fiber. Cottage cheese also contains calcium to keep those bones healthy!

Ingredients You’ll Need

  • Bread – you can use any type of bread you prefer! This toast is open-faced, and not a sandwich, so you will only need 1 piece of bread per serving

  • Cottage cheese – you can use low-fat or full-fat depending on your preference. They both taste delicious in my opinion! If you don’t like the chunkiness of cottage cheese, you can blend it for a few seconds to make it smoother

  • Ripe peaches – I sliced mine into thin wedges, but you can also dice the peaches if you want. The more ripe your peaches are, the sweeter they will be! You can also make this toast with other fruits like blueberries or strawberries

  • Honey – Adds a hint of sweetness and enhances the flavor of the peach cottage cheese toast. You can also use maple syrup instead of honey. Even hot honey would taste delish here! This ingredient is optional, so if you don’t have honey at home, just skip this ingredient!

📌 OPTIONAL INGREDIENTS: Cinnamon, chopped nuts, chia seeds, hemp seeds, fresh basil, or a drizzle of balsamic glaze would all taste amazing on this cottage cheese toast!

Equipment You’ll Need

My favorite part of this recipe is that you don’t need any fancy equipment! Just a cutting board and a knife! Using a toaster or small skillet is optional if you want to toast your bread before assembling.

Step-by-Step Instructions for Peach Cottage Cheese Toast

1. Toast the bread (optional)

This step is optional, but I recommend toasting your slice of bread if you have a couple of extra minutes. I like to toast mine on the skillet with a drizzle of olive oil, but you can also pop it in the toaster for a few minutes on low setting.

You can make it as crispy as you want, but I recommend just giving it a light toast until it’s a light golden hue, like in the picture above.

2. Spread cottage cheese on the bread

Spread about 1/3 cup of cottage cheese across the slice of bread. You can add more or less cottage cheese depending on your preference. If you prefer your cottage cheese to be smooth and not as chunky, you can blend it for a minute or two.

3. Top with peach slices

Arrange the peach slices on top of the cottage cheese in an even layer. You can also dice your peaches if you want, but I think slices stick on better.

4. Drizzle with honey

I like to drizzle about a teaspoon of honey on top of the peach slices. You can definitely skip this step if you don’t have honey or don’t want the extra sweetness. Other fun toppings include fresh basil, chia seeds, chopped nuts, or even a little bit of balsamic glaze!

5. Serve and enjoy!

Ideas For Substitutions

📌 Use whole grain or sprouted bread instead of white toast for extra fiber and protein

📌 Try different bases – swap the bread for a bagel, rice cake, cracker, or an English muffin

📌 No peaches? Use thawed frozen peach slices or try another fruit like strawberries or blueberries

📌 Skip the honey if your peaches are very ripe, you don’t want extra sugar, or if you’re serving this to a baby under 12 months old

📌 Choose low-fat cottage cheese – it will still taste delicious!

📌 Swap cottage cheese for ricotta or Greek yogurt if that’s what you have on hand — both add protein and creaminess!

📌 Optional toppings – cinnamon, chopped nuts, chia seeds, hemp seeds, fresh basil, or a drizzle of balsamic glaze would all taste amazing on this cottage cheese toast!

How to Make This Recipe on a Budget

🤑 The cost estimate for this recipe is about $1.50 per toast

I bought my ingredients from Trader Joe’s which had all of the ingredients at an affordable price!

I also love Aldi when I’m trying to find good quality produce on a budget. If it’s the summertime, try to find peaches for a good deal at local farmer’s market. They’re often more fresh there!

Here are some tips to save money when making this recipe:

  • Use seasonal fruit – peaches are cheapest around mid-summer especially at places like Trader Joe’s, Aldi, or local farmer’s markets


  • Buy store-brand cottage cheese – store brands often cost less and taste just as good!


  • Skip the extras – if you don’t have honey, don’t worry! This toast tastes amazing just with the bread, cottage cheese, and peaches alone. You can also get creative and use ingredients you already have in your fridge or pantry as toppings

How to Adapt This Recipe for Babies and Toddlers

For Babies (6+ months)

  • Use low-sodium cottage cheese and blend/puree it so that it’s not chunky

  • Do not use honey – it’s not safe for kids under 1!

  • Use very ripe peaches or steam the peaches until soft to make it easy for babies to gum. You can also puree the peaches

  • Don’t toast the bread; just use plain, non-seedy bread that is soft

  • Serve it deconstructed with cottage cheese, peach wedges, and toast strips served separately for baby-led weaning

For Toddlers (12+ months)

  • Lightly toast the bread and cut into small squares or strips

  • Skip the honey or only use a small amount if your toddler is over 12 months

  • Let toddlers help “decorate” the toast with peaches or sprinkle their own toppings!

Storage Instructions

I recommend preparing and eating this toast right away. This recipe does not refrigerate well beyond a few hours. It also does not freeze well.

You can definitely slice peaches in advance and store them in an airtight container inside the fridge for 1-2 days! But I would recommend arranging the toast within a few hours of when you’re going to eat it.

Instructions
 

  • Toast the bread (optional). If you like your toast a little crispy, toast your slice of bread lightly on the skillet with a drizzle of olive oil or in the toaster on low setting until it becomes light golden on top.
  • Add cottage cheese on top of the bread. Spread evenly across the bread using a knife. I used ⅓ cup of cottage cheese, but you can use more or less depending on your preference.
  • Top with sliced peach wedges. Arrange them in an even layer on top of the cottage cheese spread.
  • Drizzle honey on top of the peach slices. You can skip this step if you want, or if you are making this toast for young kids.
  • Serve and enjoy! You can top with fresh basil, chopped nuts, chia seeds, or a drizzle of balsamic glaze if desired!
