A few months ago, I updated my crack chicken tater tot casserole recipe (holy moly, just thinking about it makes my mouth water). I had some leftover tots and decided to make another tater tot casserole, but breakfast edition!
And since I’m obsessed with adding cottage cheese to all my breakfast recipes (like these egg muffins and baked egg bowls), you know I had to add some to this casserole too 😬

Oh and since I’m extra lazy these days, this is a one-pan recipe. You literally just dump all the ingredients in your baking dish, mix, and pop it in the oven. The less cleanup, the better!

Why You’ll Love This Recipe
🍳 This breakfast tater tot casserole is:
- Made with just 4 ingredients
- High protein
- A one-pan recipe
- Freezer-friendly
- Meal prep-friendly
- Great as leftovers

Ingredients & Substitutions

- Large eggs: I used 8 of ’em for this casserole.
- Low-fat cottage cheese: I used low-fat, but you could use full-fat if you prefer. I haven’t tried this recipe with non-fat cottage cheese so not sure how it would hold up in the oven.
- Frozen tater tots: No need to thaw or cook them first – just pop them on top of the casserole before baking!
- Shredded cheddar cheese: Makes the casserole cheesy and delish.
📌 OPTIONAL INGREDIENTS: You can add in chopped cooked sausage, bacon, bell peppers, onions, or mushrooms to the egg-cottage cheese mixture before baking. Feel free to season with garlic powder, onion powder, or a pinch of cayenne. If you find this casserole to be too mild, you can add some hot sauce on top after baking!

- 8×8 baking dish: I used my Le Creuset baking dish from HomeGoods for this recipe, but any oven-safe baking dish will work. I’d stick with either an 8×8 or 9×9 baking dish.
How To Make the Cottage Cheese Tater Tot Breakfast Casserole

Storage Instructions
- Make Ahead: Assemble the casserole, cover with plastic wrap, and store in the fridge up to 24 hours before baking. Note that the tater tots may get a little soggy as they sit on top of the egg mixture.
- Fridge: Cover the leftover casserole with plastic wrap or aluminum foil and store in the refrigerator for up to 4 days. You can also divide it up into individual portions before refrigerating.
- Freezer: Allow the casserole to cool completely first. Then, cut the casserole into individual portions and store them in freezer-safe containers for up to 2 months.
- Reheating: Microwave individual portions for 1–2 minutes, or until heated through. For a crispier tater tot topping, reheat in the oven at 350°F for 10–15 minutes. You can also heat it up in an air fryer at 350°F for about 3-5 minutes.

4-Ingredient Cottage Cheese Tater Tot Breakfast Casserole
Equipment
- 8×8 baking dish
Ingredients
- 8 large eggs
- ½ cup low-fat cottage cheese
- 1½ cups shredded cheddar cheese (divided)
- 16 oz frozen tater tots
- ⅛ tsp salt
- ⅛ tsp black pepper
Instructions
- Preheat the oven to 375°F. Lightly grease an 8×8-inch baking dish with olive oil spray.
- Make the egg mixture: Crack 8 eggs into the greased baking dish. Add the cottage cheese, ½ cup shredded cheddar cheese, salt, and black pepper. Whisk everything together until combined.

- Add the tater tots: Arrange the frozen tater tots in a single layer on top of the egg mixture.

- Add the cheese topping: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the tater tots.

- Bake uncovered for 35 minutes, or until the eggs are fully set in the center, the cheese is melted, and the tater tots are golden brown.

- Serve and enjoy! Let the casserole cool for 5 minutes before digging in.
Notes
- Mix everything together in the baking dish: I mixed all the ingredients directly in the baking dish to save me an extra step!
- Baking times may vary: Make sure your eggs are cooked through before serving. Check that the center is set and no longer liquid. If it’s still runny, continue baking for a few more minutes.
- If you find this casserole to be too mild or bland, you can drizzle some hot sauce on top to add more flavor.
