I totally made this recipe on a whim this past Saturday, and it turned out so delicious that I decided to make a quick post about it!
It’s become one of my quick dinner recipes that literally takes just 3 ingredients and 10 minutes to come together with minimal cooking or prep involved. As a nice bonus, they’re also high protein. Totally my kind of lazy girl dinner!

These chicken quesadillas are great for using up leftover tortillas or chicken. It’s also a beginner-friendly recipe that’s extremely forgiving.
They’re crispy on the outside, cheesy on the inside, and loaded with flavor. I think even picky eaters and kids are going to love these 3-ingredient quesadillas!

Ingredients & Substitutions

- Flour tortillas: You’ll want to use large, burrito-size tortillas for these quesadillas. I think mine were 10-inches in diameter. They’re large enough to hold the filling and easy to fold & flip.
- Shredded rotisserie chicken: I prefer to use rotisserie chicken for these quesadillas because it’s already seasoned. You can use any leftover cooked shredded chicken (make sure your chicken is already cooked, not raw!) but if you’re using plain cooked chicken then you may have to add some seasonings (like taco seasoning) to give your quesadillas more flavor.
- Shredded cheddar cheese: I usually use sharp cheddar cheese, but you can really use any cheese you have on hand for these quesadillas.
📌 OPTIONAL INGREDIENTS: If you don’t have chicken, you can use cooked ground beef or any veggies you have on hand. These quesadillas are very forgiving! I just used chicken & cheese, but you can add any toppings you want. Serve the quesadillas with salsa, sour cream, or guacamole.

- Large skillet: You’ll just need a large skillet for this recipe that gives you lots of space to fold and flip the quesadillas.
How To Make the Cheesy Chicken Quesadillas






Storage Instructions
- Fridge: Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days.
- Freezer: Allow the quesadillas to cool completely before wrapping each one individually in plastic wrap. Place them in a freezer-safe bag or container and freeze for up to 2 months.
- Reheating: For the crispiest quesadillas, reheat them in a skillet over medium-low heat for 2–3 minutes per side. You can also reheat them in a 350°F air fryer for 3–4 minutes. The microwave works if you’re in a hurry, but the tortillas won’t be as crispy.

Equipment
- Large skillet
Ingredients
- 2 flour tortillas (10-inch)
- 1 cup shredded cooked rotisserie chicken
- 1 cup shredded cheddar cheese
Instructions
- Heat a large nonstick skillet over medium heat.
- Lay one flour tortilla flat in the skillet.
- Spread ½ cup of the shredded rotisserie chicken over one half of the tortilla.

- Sprinkle ½ cup of the shredded sharp cheddar cheese evenly over the chicken.

- Fold the empty half of the tortilla over the filling.

- Cook for 3-4 minutes, or until the bottom is golden brown and crispy.
- Carefully flip the quesadilla and cook for another 2–3 minutes, until the second side is golden brown and the cheese is melted.

- Transfer to a cutting board and let rest for 1 minute before slicing into wedges.

- Repeat with the remaining ingredients.
- Serve and enjoy!
