I recently made this 4-ingredient chicken sausage and sweet potato sheet pan dinner and holy moly…it’s become my new favorite fall dinner for lazy nights!

I used to think nothing could top my chicken shawarma and pesto potatoes sheet pan, but I think this is a pretty good runner up.
And yes at first glance this sheet pan dinner seems like it’s going to be bland. But the combination of spicy chicken sausage, garlic, and salt & pepper is surprisingly flavorful!

Ingredients & Substitutions

- Chicken sausage: I used the Trader Joe’s Spicy Italian Chicken Sausage for this recipe but you can use any flavor you’d like. Just make sure to use precooked sausage, not raw sausage for this recipe.
- Sweet potato: It pairs really well with chicken sausage! I recommend cutting the sweet potato into smaller cubes so it cooks evenly alongside the chicken sausage and bell pepper.
- Bell pepper: Any color bell pepper works! Cut into strips so it cooks evenly alongside the potatoes and chicken sausage.
- Garlic: Adds so much flavor to the veggies!
- Salt, pepper, and olive oil: I didn’t include these in the ingredient list but these are all you’ll need to make the veggies flavorful!
📌 OPTIONAL INGREDIENTS: I kept it simple with just salt & pepper, but you can add additional seasonings to amp up the flavor. A pinch of cayenne, red pepper flakes, dried sage, dried thyme, or even some Parmesan cheese over the veggies adds a nice layer of flavor.

All you’ll need for this recipe is a large sheet pan! I got mine from Amazon, but you can buy them at Target or HomeGoods as well. You’ll also need a cutting board and knife to chop up the veggies and dice the sausage.
Totally optional, but I used my Foodstar chopper to dice up my sweet potato. I love this thing, it makes chopping veggies SO much easier!

Storage Instructions
- Make ahead: You can chop the veggies and slice the chicken sausage ahead of time. Store the prepared ingredients in the refrigerator until you’re ready to bake.
- Refrigerator: Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
- Freezer: Not recommended.
- Reheating: Reheat leftovers in the microwave until warmed through. You can also reheat them in a skillet or air fryer if want the sausage and vegetables to get a little crispy.

Equipment
- Large sheet pan
- Cutting board & knife
Ingredients
- 12 oz precooked chicken sausage (sliced into rounds)
- 1 medium sweet potato (cut into ½ inch cubes)
- 1 bell pepper (chopped into strips)
- 3 garlic cloves (minced)
- salt & pepper
- 1 tbsp olive oil
Instructions
- Preheat the oven: Preheat the oven to 400°F. Line a large sheet pan with parchment paper or aluminum foil (if desired) and lightly spray with olive oil.
- Prep the sheet pan: Add the sliced chicken sausage to one half of the sheet pan. Add the cubed sweet potato, bell pepper strips, and minced garlic to the other half.

- Season: Drizzle 1 tablespoon of olive oil over the sausage and vegetables. Season the vegetables with salt and pepper, then toss everything until evenly coated. Spread into a single layer.

- Bake for 20 minutes, or until the sweet potatoes are tender and the chicken sausage is lightly browned.

- Serve and enjoy!
Notes
- Use pre-cooked sausage: Make sure to use pre-cooked sausage, not raw sausage, for this recipe.
- Cut the sweet potatoes into 1/2 inch cubes so it cooks evenly along with the bell peppers and chicken sausage.
- I recommend using fresh vegetables; you could use frozen, but they release more water so it may get a bit soggy while baking.
